Preparation
- Preheat your oven to 375°F (190°C) for optimal cooking temperature.
- Wash the zucchini thoroughly and slice them into ½ inch rounds. Pat them dry with a paper towel.
- Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly spray with olive oil and sprinkle salt, pepper, garlic powder, and dried oregano.
Baking
- Bake the zucchini slices for about 15 minutes, until they begin to soften and brown slightly.
- Remove zucchini from the oven and add a dollop of pizza sauce to each slice. Top with shredded mozzarella and any additional toppings.
- Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute or two before serving hot.
Notes
You can customize the pizza bites with various toppings like diced tomatoes and spinach. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Reheat in the oven at 350°F (175°C).
