Zucchini Base
  • 2 medium medium zucchinis, sliced into ½ inch rounds Choose firm zucchinis for best texture.
  • Olive oil spray for coating Lightly spray for flavor and crispiness.

Toppings
  • 1 cup pizza sauce (store-bought or homemade) Use your favorite pizza sauce.
  • 1.5 cups shredded mozzarella cheese (or cheese alternative) Feel free to use any melting cheese of choice.
  • 0.5 cup sliced bell peppers (your choice of colors) Customize with your preferred colors and varieties.
  • 0.25 cup sliced olives (black or green) Optional, use your favorite.
  • 1 teaspoon dried oregano

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) for optimal cooking temperature.
  2. Wash the zucchini thoroughly and slice them into ½ inch rounds. Pat them dry with a paper towel.
  3. Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly spray with olive oil and sprinkle salt, pepper, garlic powder, and dried oregano.
Baking
  1. Bake the zucchini slices for about 15 minutes, until they begin to soften and brown slightly.
  2. Remove zucchini from the oven and add a dollop of pizza sauce to each slice. Top with shredded mozzarella and any additional toppings.
  3. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
  4. Remove from the oven and let cool for a minute or two before serving hot.

Notes

You can customize the pizza bites with various toppings like diced tomatoes and spinach. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Reheat in the oven at 350°F (175°C).
