Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the flour, oats, baking soda, baking powder, cinnamon, and nutmeg. Mix well.
- In another bowl, whisk together the honey, oil, eggs, and vanilla extract until smooth.
- Add the grated zucchini to the wet mixture and stir until incorporated.
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
- Fold in chopped nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth out the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Store wrapped tightly in plastic wrap or in an airtight container for up to three days. Can be frozen for up to three months.
