Ingredients
  

Main Ingredients
  • 1 cup cooked lentils Use green or brown lentils.
  • 1 large sweet potato, cooked and mashed Boil until soft.
  • 1/2 cup breadcrumbs Use gluten-free if needed.
  • 1/4 cup chopped onion Any onion variety will work.
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper Adjust according to preference.
  • Olive oil for frying Use as needed for frying.

Method
 

Preparation
  1. Cook the lentils according to package instructions until tender. Drain and let them cool.
  2. Boil the sweet potato until soft, about 15-20 minutes. Drain, peel, and mash until smooth. Allow it to cool.
Mixing and Forming Patties
  1. In a large mixing bowl, combine the cooked lentils, mashed sweet potato, breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper. Mix until well combined.
  2. Using your hands, form the mixture into small patties, about 2-3 inches in diameter.
Cooking
  1. In a large skillet, heat a few tablespoons of olive oil over medium heat.
  2. Fry the patties for about 4-5 minutes on each side, or until golden brown. Remove and place on paper towels to remove excess oil.

Notes

You can store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven or a skillet to maintain crispiness. Substitute chickpeas for lentils if desired.
