  • 2 cups rolled oats
  • 1 cup fresh strawberries, chopped
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the honey or maple syrup, almond butter (or peanut butter), and vanilla extract. Mix until smooth and well combined.
  3. In another bowl, mix the rolled oats and salt together. Fold the oats into the wet mixture until well mixed.
  4. Gently fold in the chopped fresh strawberries, making sure to distribute them throughout the mixture evenly.
  5. Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour the mixture into the dish, pressing down firmly to create an even layer.
  6. Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center appears set.
  7. Let the bars cool in the baking dish for about 10 minutes, then use the parchment overhang to lift them out. Allow them to cool completely on a wire rack before cutting them into squares.

Notes

For substitutions, feel free to switch up the fruit based on availability. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Don't skip the cooling step to help the bars set properly.
