  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 1 cup brown rice
  • 1 cup broccoli florets
  • 1 medium carrot, sliced
  • 2 stalks green onions, chopped
  • sesame seeds for garnish

Preparation
  1. Start by rinsing the brown rice under cold water. In a medium pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until tender.
  2. While the rice is cooking, heat the sesame oil in a large skillet over medium heat. Add the diced chicken and cook for about 5-7 minutes, or until it's browned and cooked through.
  3. In a bowl, whisk together the soy sauce, honey, garlic, and ginger. Pour this sauce over the chicken in the skillet. Stir well to ensure the chicken is evenly coated, and cook for another 3-5 minutes until the sauce thickens slightly.
  4. While the chicken is cooking, steam the broccoli florets until tender but still vibrant green, approximately 3-4 minutes. Slice the carrot and set aside.
  5. Once the rice is ready, fluff it with a fork and divide it among serving bowls. Top with the sticky chicken, steamed broccoli, sliced carrots, and garnish with chopped green onions and sesame seeds.

Notes

For Halal-friendly options, substitute chicken with diced tofu for a vegetarian alternative or use beef. Cook the rice ahead of time, as it takes the longest to prepare, and prepare it a day in advance for convenience. Avoid overcooking the chicken to keep it juicy.
