Ingredients
  

For the Bowl
  • 1 lb flank steak Can substitute with skirt or sirloin steak.
  • 2 cups cooked brown rice Make sure rice is pre-cooked.
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1 cup shredded lettuce
  • 1/2 cup salsa
For Marinating
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

Marinate the Steak
  1. In a bowl, mix the olive oil, cumin, chili powder, salt, and pepper. Add the flank steak and marinate for at least 15 minutes.
Cook the Brown Rice
  1. If you haven't done this already, cook your brown rice according to package instructions. Set it aside.
Cook the Steak
  1. Heat a skillet over medium-high heat. Once hot, add the marinated flank steak. Cook for about 4-5 minutes on each side or until it reaches your desired doneness. Make sure to let it rest for a few minutes before slicing it against the grain.
Prepare the Toppings
  1. While the steak is resting, rinse and drain the black beans, slice the avocado, and shred the lettuce.
Assemble the Bowls
  1. In your serving bowls, start by layering the cooked brown rice, followed by the sliced steak, black beans, corn, diced tomatoes, and avocado. Top it off with lettuce and a spoonful of salsa.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, microwave for about 1-2 minutes, or reheat steak and rice in a skillet for crispiness.
