Preparation
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- In a large oven-proof skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
- In a medium bowl, combine the cottage cheese, chopped spinach, chopped artichokes, salt, and pepper. Mix well.
- Return the chicken to the skillet and top each piece with the cottage cheese mixture. If desired, sprinkle shredded mozzarella cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, garnish with fresh parsley, and serve warm.
Notes
