  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese (optional, for topping)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, minced (for garnish)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  3. In a large oven-proof skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. In a medium bowl, combine the cottage cheese, chopped spinach, chopped artichokes, salt, and pepper. Mix well.
  5. Return the chicken to the skillet and top each piece with the cottage cheese mixture. If desired, sprinkle shredded mozzarella cheese on top.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

To keep your Healthy Spinach Artichoke Chicken fresh, store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 15-20 minutes or until warmed through.
