  • 1 cup pumpkin puree Make sure it's pure pumpkin, not pumpkin pie filling.
  • 1 cup almond flour Can be substituted with oat flour for nut-free option.
  • 1/4 cup honey or maple syrup Choose based on sweetness preference.
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice Add extra if you prefer a stronger flavor.
  • 1/2 cup dark chocolate chips (for coating) Melt these for coating the truffles.

Preparation
  1. In a large mixing bowl, combine the pumpkin puree, almond flour, honey (or maple syrup), vanilla extract, and pumpkin spice. Use a spatula and mix well until everything is fully incorporated.
  2. Cover the mixture and place it in the refrigerator for about 10 minutes to make it easier to roll into truffles.
  3. Take small portions of the mixture and roll them into bite-sized balls, aiming for about 1 inch in diameter.
  4. Melt the dark chocolate chips in a microwave-safe bowl by heating in 15-30 second intervals, stirring well after each interval until fully melted.
  5. Dip each truffle in the melted dark chocolate, allowing any excess chocolate to drip off.
  6. Place the truffles back on a baking sheet lined with parchment paper and let them cool in the fridge until the chocolate hardens, about 15-30 minutes.

Notes

These truffles can be stored in the refrigerator for up to a week or frozen for up to three months. For storage, use an airtight container and separate layers with parchment paper.
