Preparation
- In a medium-sized mixing bowl, combine the pumpkin puree, almond flour, vanilla extract, cinnamon, honey or maple syrup, and a pinch of salt. Stir until the mixture is fully combined and has a smooth texture.
- Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes to help the mixture firm up.
- Once chilled, use a tablespoon to scoop portions of the mixture and roll them into small balls, about 1 inch in diameter.
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until fully melted and smooth.
- Dip each truffle into the melted chocolate, allowing any excess chocolate to drip off. Place the chocolate-coated truffles on a parchment-lined baking sheet.
- Transfer the baking sheet to the refrigerator to allow the chocolate to set, about 15 minutes. Once set, your truffles are ready to serve!
Notes
Store your Healthy Pumpkin Truffles in an airtight container in the refrigerator for up to a week. You can freeze the truffles for up to three months; thaw them in the refrigerator overnight when ready to enjoy.
