Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
- In another bowl, whisk together the canned pumpkin puree, sugar, vegetable oil or applesauce, milk, and eggs until well-combined.
- Gradually add the dry ingredients to the wet ingredients. Mix just until combined — a few lumps are okay.
- If using, fold in the nuts or chocolate chips gently into the batter.
- Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Thaw at room temperature and refresh in the oven to regain moisture.
