Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour Can be substituted with whole wheat flour.
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground ginger
Wet Ingredients
  • 1 cup canned pumpkin puree
  • 0.5 cups sugar (or a sugar substitute) Coconut sugar or honey can be used for a lower glycemic index.
  • 0.25 cups vegetable oil or applesauce
  • 0.25 cups milk (or almond milk)
  • 2 large eggs
Add-Ins
  • 0.5 cups chopped nuts or chocolate chips Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In another bowl, whisk together the canned pumpkin puree, sugar, vegetable oil or applesauce, milk, and eggs until well-combined.
  4. Gradually add the dry ingredients to the wet ingredients. Mix just until combined — a few lumps are okay.
  5. If using, fold in the nuts or chocolate chips gently into the batter.
  6. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Thaw at room temperature and refresh in the oven to regain moisture.
