Ingredients

  • 1 cup pumpkin puree Use fresh or canned pure pumpkin.
  • 1/3 cup olive oil or melted coconut oil Either works well for moisture.
  • 1/2 cup honey or maple syrup Sweetens the bread naturally.
  • 2 large eggs Bind the ingredients together.
  • 1 tsp vanilla extract Adds flavor.
Dry Ingredients
  • 1 1/2 cups whole wheat flour Provides a hearty texture.
  • 1 tsp baking powder Helps the bread rise.
  • 1/2 tsp baking soda Works with the acid of the pumpkin.
  • 1 tsp ground cinnamon Adds warmth and flavor.
  • 1/2 tsp ground nutmeg For extra warmth and spice.
  • a pinch salt Enhances flavor.
Optional Add-ins
  • 1/2 cup chopped nuts or seeds For texture and crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the pumpkin puree, oil, honey (or syrup), eggs, and vanilla extract. Whisk until smooth.
  3. In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients into the wet mixture and stir gently until just combined. Fold in any optional nuts or seeds.
Baking
  1. Pour the batter into the greased loaf pan and smooth the top.
  2. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Store tightly wrapped at room temperature for up to 3 days, or refrigerate for up to 1 week. Reheat slices in a toaster or microwave.
