Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the pumpkin puree, oil, honey (or syrup), eggs, and vanilla extract. Whisk until smooth.
- In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients into the wet mixture and stir gently until just combined. Fold in any optional nuts or seeds.
Baking
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Store tightly wrapped at room temperature for up to 3 days, or refrigerate for up to 1 week. Reheat slices in a toaster or microwave.
