Ingredients
  

For the soup base
  • 1 lb ground turkey or chicken Can substitute with plant-based protein for a vegetarian option.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 14.5 oz diced tomatoes, canned
  • 4 cups vegetable or Halal chicken broth
  • 2 cups zucchini, diced Can swap for other vegetables such as bell peppers or mushrooms.
  • 1 cup spinach, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 8 noodles lasagna noodles, broken into pieces
For the cheesy topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Plus more for topping.

Method
 

Preparation
  1. In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and garlic, sautéing for about 3-4 minutes until fragrant and the onion turns translucent.
  2. Add in the ground turkey (or chicken) and cook until fully browned, about 5-7 minutes. Season with salt, pepper, and Italian seasoning as it cooks.
  3. Stir in the diced tomatoes (with juice), broth, zucchini, and spinach. Bring this mixture to a simmer.
  4. Once simmering, add the broken lasagna noodles to the pot. Allow everything to cook together for an additional 10-15 minutes, or until the noodles are tender.
  5. Finally, stir in the ricotta and mozzarella cheeses just before serving. They will melt into the soup, creating a creamy texture.
  6. Ladle the Healthy Lasagna Soup into bowls and top with extra mozzarella, fresh herbs, or a sprinkle of Parmesan-style cheese if desired.

Notes

For storage, keep leftovers in an airtight container in the refrigerator for up to 3-4 days. Can freeze in portion-sized containers for 2-3 months. Reheat by thawing overnight and warming gently over low heat.
