Ingredients
  

Main Ingredients
  • 8 oz lasagna noodles, broken into pieces Can substitute with whole grain or gluten-free noodles.
  • 1 lb ground turkey or beef Choose lean ground turkey for a lighter option.
  • 1 cup ricotta cheese Can substitute with cream cheese.
  • 1 cup mozzarella cheese, shredded Reserve half for garnishing.
  • 4 cups marinara sauce
  • 4 cups vegetable broth
  • 1 tsp Italian seasoning
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 2 cups fresh spinach You can also use kale or another leafy green.
  • to taste salt and pepper

Method
 

Preparation
  1. In a large pot over medium heat, sauté the diced onion and minced garlic for about 2 minutes.
  2. Add the ground turkey or beef and cook until browned, breaking it apart with a spoon.
Cooking
  1. Pour in the marinara sauce and vegetable broth. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil.
  2. Once boiling, add the broken lasagna noodles. Reduce the heat to a simmer and cook for 8-10 minutes, or until the noodles become tender.
  3. Stir in the fresh spinach and allow it to wilt for about 2 minutes.
  4. Remove the pot from heat and stir in the ricotta and half of the mozzarella until well combined.
Serving
  1. Ladle the soup into bowls, garnish with remaining mozzarella, and enjoy!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months. When reheating, add a splash of vegetable broth to restore moisture.
