Preparation
  1. In a large mixing bowl, combine the ground chicken, onion, garlic, parsley, oregano, salt, and pepper. If you’re using feta cheese, fold it in gently.
Forming Patties
  1. Using your hands, divide the mixture into four equal portions and shape them into patties.
Cooking
  1. Preheat a grill or non-stick skillet over medium-high heat. If using a skillet, you may want to add a splash of olive oil to prevent sticking.
  2. Place the patties on the grill or skillet and cook for approximately 5 minutes on each side, or until they’re fully cooked through (the internal temperature should reach 165°F).
Assembly
  1. Toast the whole wheat buns lightly, then layer with fresh lettuce, a chicken patty, sliced tomatoes, and a generous dollop of tzatziki sauce.
