  • 1 cup Greek yogurt (plain or flavored)
  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract (optional) Optional for flavor enhancement
  • 1 pinch salt To enhance flavor

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt and peanut butter. Stir until they are well blended, making sure no streaks remain.
  2. Add the honey or maple syrup, vanilla extract, and a pinch of salt to the yogurt-peanut butter mix. Stir well to ensure everything is evenly distributed.
  3. Using a tablespoon or a small cookie scoop, portion the mixture into silicone molds or an ice cube tray. Tap the tray gently on the counter to remove air bubbles and ensure even distribution.
  4. If using toppings, sprinkle them evenly over the filled molds, gently pressing them in to ensure they stick.
  5. Place the molds in the freezer and let them freeze for at least 4-6 hours or until solid.
  6. Once frozen, remove the bites from the molds and store them in an airtight container in the freezer for future snacking.

Notes

These bites are best stored in the freezer, where they can last for up to 2 months. Allow to sit for a minute or two before biting in to get the perfect creamy texture. Substitute peanut butter with almond or sunbutter for a nut-free option.
