Preparation
  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Your Muffin Tin: Grease a muffin pan with cooking spray or olive oil.
  3. Whisk the Eggs: In a large mixing bowl, crack the eggs and add the milk. Whisk until fluffy and well-combined.
  4. Add the Veggies: Toss in the chopped spinach, crumbled feta, and any optional vegetables. Season with salt and pepper.
  5. Fill the Muffin Cups: Evenly distribute the mixture in the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake: Bake in the preheated oven for about 20 minutes or until set and lightly golden.
  7. Cool & Serve: Let cool a few minutes before removing from the pan. Serve warm.
