  • 1 cup pitted dates, chopped Medjool dates work best for this recipe.
  • 1 cup almond flour Can be substituted with oat flour or a gluten-free blend.
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup walnuts or pecans (optional) Fold into mixture if using.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a square baking pan (8x8) with parchment paper for easy removal.
  2. Blend the Dates: In a food processor, combine the chopped dates, melted coconut oil, and vanilla extract. Blend until it forms a smooth paste.
  3. Combine Dry Ingredients: In a separate bowl, mix the almond flour, cocoa powder, and salt. Stir to ensure everything is evenly distributed.
  4. Mix It All Together: Gradually add the date paste to the dry ingredients. Mix until well combined. If adding nuts, fold them into the mixture at this stage.
  5. Pour Into Pan: Transfer the brownie batter into the lined baking pan and smooth the top with a spatula.
  6. Bake: Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool and Cut: Allow the brownies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before cutting into squares.

Notes

To keep brownies fresh, store them in an airtight container at room temperature for up to three days. Refrigerate for up to a week, or freeze for up to three months. Reheat by letting sit at room temperature for 30 minutes or in a preheated oven at 300°F (150°C).
