Ingredients
  

Vegetables
  • 2 cups fresh spinach, chopped Can substitute with frozen spinach.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
Egg Mixture
  • 6 large eggs
  • 1 cup milk (or plant-based milk) Use for a non-dairy option.
  • 1/4 teaspoon ground nutmeg Optional but recommended for flavor.
  • Salt and pepper to taste Salt and pepper
Cheese
  • 1 cup shredded cheese Cheddar or mozzarella work best.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the chopped onions and minced garlic until the onions become translucent. Add the chopped spinach, cooking just until wilted (about 2-3 minutes). Remove from heat and let cool slightly.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, and ground nutmeg until well combined.
  4. Stir the sautéed spinach mixture and shredded cheese into the egg mixture, blending it all seamlessly to create a rich filling.
  5. Pour the mixture into a greased pie dish or oven-safe skillet, spreading it evenly.
Baking
  1. Place in your preheated oven and bake for about 30-35 minutes, or until the quiche is puffed and golden brown around the edges.
  2. Let it cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

Feel free to experiment with different herbs like thyme or basil. You can swap the spinach for other veggies like mushrooms or bell peppers.
