Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cut potato cubes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
  3. Line a baking sheet with parchment paper for easy cleanup and spread the seasoned potato cubes in a single layer, ensuring they aren’t overcrowded.
Cooking
  1. Bake the potato bites in the preheated oven for 20-25 minutes until golden brown and crispy, flipping halfway through for even cooking.
  2. Once baked, remove from the oven and let cool for a few minutes before serving.
Serving
  1. Serve the potato bites drizzled with yogurt or tahini, topped with fresh herbs.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. To reheat, place in a preheated oven at 350°F (175°C) for about 10 minutes.
