  1. Start by gathering all your ingredients. This will save time and ensure you're not scrambling at the last minute.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, eggs, vanilla extract, baking powder, and salt. You can use a blender or a food processor for a smooth mixture, or mash with a fork if you prefer a bit of texture.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil or butter.
Cooking
  1. Once your skillet is hot, pour about 1/4 cup of the pancake batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes).
  2. Carefully flip the pancakes with a spatula and cook for an additional 2 minutes or until golden brown.
  3. Stack them high on a plate and add your favorite toppings!

Notes

Feel free to add fruits, nuts, or spices like cinnamon and nutmeg for extra flavor. For storage, keep in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
