Ingredients
  

Dry Ingredients
  • 1 cup oats
  • 1/2 cup almond flour
  • a pinch salt
Wet Ingredients
  • 1/4 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
Extras
  • 1/4 cup chocolate chips or raisins

Method
 

Preparation
  1. In a large mixing bowl, combine the oats, almond flour, and a pinch of salt. Stir until well blended.
  2. Slowly add in the nut butter, honey or maple syrup, and vanilla extract. Use a spatula or your hands to mix everything together until fully incorporated. The mixture should be sticky yet moldable.
  3. Fold in the chocolate chips or raisins to add that extra burst of flavor!
  4. With damp hands, scoop a tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet. Repeat until all the dough is shaped into bites.
  5. Place the bites in the fridge for about 30 minutes to set, then enjoy them fresh!

Notes

Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months. Allow to thaw before enjoying.
