  • 1/2 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking soda
  • pinch salt
Wet Ingredients
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
Chocolate Addition
  • 1/4 cup chopped dark chocolate or chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, combine almond flour, shredded coconut, cocoa powder, baking soda, and salt.
  3. In another bowl, mix melted coconut oil, maple syrup, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix with a spatula until combined; the mixture should be thick and sticky.
  5. Fold in the chopped dark chocolate or chocolate chips until evenly distributed.
  6. Scoop out small portions of dough, roll them into balls, and place on a baking sheet lined with parchment paper, leaving space for spreading.
Baking
  1. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For perfect cookies, use coconut flour as a substitution for almond flour by adjusting the quantity due to its absorbency. Keep an eye on the cookies during the last few minutes of baking to avoid overcooking.
