Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, combine almond flour, shredded coconut, cocoa powder, baking soda, and salt.
- In another bowl, mix melted coconut oil, maple syrup, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and mix with a spatula until combined; the mixture should be thick and sticky.
- Fold in the chopped dark chocolate or chocolate chips until evenly distributed.
- Scoop out small portions of dough, roll them into balls, and place on a baking sheet lined with parchment paper, leaving space for spreading.
Baking
- Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For perfect cookies, use coconut flour as a substitution for almond flour by adjusting the quantity due to its absorbency. Keep an eye on the cookies during the last few minutes of baking to avoid overcooking.
