Preparation
  1. Start by peeling the ripe bananas and cutting them into bite-sized slices, about 1-inch thick.
  2. In a small bowl, scoop out the natural peanut butter. Feel free to warm it slightly in the microwave for about 10-15 seconds to make spreading easier.
  3. Take a slice of banana and use a small spoon or knife to spread a layer of peanut butter on one side. Top it with another banana slice, making a delightful little sandwich.
  4. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the chocolate is completely melted and smooth.
  5. Carefully dip each banana sandwich into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off.
  6. Place the chocolate-covered banana bites on a parchment-lined baking sheet. If you like, sprinkle a pinch of sea salt on top before the chocolate sets.
  7. Pop the baking sheet in the freezer for about 15-20 minutes until the chocolate hardens.
  8. Once set, transfer the bites to an airtight container for storage. They can be enjoyed straight from the freezer for a cool treat!

Notes

For variation, use almond butter or sunflower seed butter if you're allergic to peanuts. Make sure your bananas are ripe for the best sweetness.
