Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt. Whisk until no lumps remain.
- Add the melted coconut oil and honey (or maple syrup). Mix until you achieve a thick, dough-like consistency.
- Grease a muffin tin lightly with coconut oil. Press small portions of the dough into each muffin cup, creating cups.
Baking
- Place the muffin tin in the oven and bake for about 10-12 minutes.
- Let the cookie cups cool for a few minutes before carefully removing them from the tin.
Filling and Serving
- In a separate bowl, mix Greek yogurt with honey (or maple syrup) and vanilla extract.
- Once the cookie cups are cooled, fill each cup with the yogurt mixture. Top with fruits or nuts if desired.
- Chill the filled cookie cups in the refrigerator for about 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for 3-4 days. Uncooked cookie cups can be frozen and baked directly from frozen, adding an extra minute or two to baking time.
