Ingredients
  

For the Cookie Cups
  • 1 cup almond flour Can be substituted with oat flour for gluten-free option.
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the Yogurt Filling
  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt. Whisk until no lumps remain.
  3. Add the melted coconut oil and honey (or maple syrup). Mix until you achieve a thick, dough-like consistency.
  4. Grease a muffin tin lightly with coconut oil. Press small portions of the dough into each muffin cup, creating cups.
Baking
  1. Place the muffin tin in the oven and bake for about 10-12 minutes.
  2. Let the cookie cups cool for a few minutes before carefully removing them from the tin.
Filling and Serving
  1. In a separate bowl, mix Greek yogurt with honey (or maple syrup) and vanilla extract.
  2. Once the cookie cups are cooled, fill each cup with the yogurt mixture. Top with fruits or nuts if desired.
  3. Chill the filled cookie cups in the refrigerator for about 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for 3-4 days. Uncooked cookie cups can be frozen and baked directly from frozen, adding an extra minute or two to baking time.
