  • 3 ripe ripe bananas The riper, the sweeter.
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup or honey Adjust sweetness to preference.
  • 2 large large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips Optional for added sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth. Stir in the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract until fully combined.
  3. In another bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix—stir just until combined.
  5. If desired, fold in the dark chocolate chips for an extra touch of sweetness.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing out the top.
  2. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Wrap tightly in plastic wrap or store in a sealed container at room temperature for up to 3 days. For freezing, slice the bread and wrap individual pieces in plastic, then place in a freezer bag for up to 3 months.
