Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth. Stir in the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract until fully combined.
- In another bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix—stir just until combined.
- If desired, fold in the dark chocolate chips for an extra touch of sweetness.
Baking
- Pour the batter into the prepared loaf pan, smoothing out the top.
- Bake in the preheated oven for about 50 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
Wrap tightly in plastic wrap or store in a sealed container at room temperature for up to 3 days. For freezing, slice the bread and wrap individual pieces in plastic, then place in a freezer bag for up to 3 months.
