  • 500 grams Chicken breast, cut into bite-sized pieces
  • 3 cups Fresh spinach, washed and drained
  • 2 cups Mushrooms, sliced (button or cremini work well)
  • 3 cloves Garlic, minced
  • 1 medium Onion, finely chopped
  • 2 tablespoons Olive oil
  • 1 cup Cheddar cheese, grated (or your favorite cheese)
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon Italian seasoning (optional but highly recommended)

Preparation
  1. Preheat your oven to 375°F (190°C) to ensure an even baking temperature.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and sauté until golden brown (about 5-7 minutes). Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add another tablespoon of olive oil. Sauté the onions and garlic until they become fragrant and translucent (about 2-3 minutes). Then, add the mushrooms and cook until they soften, about 5 minutes. Lastly, fold in the spinach and cook until just wilted.
  4. In a large mixing bowl, combine the cooked chicken, sautéed vegetables, and Italian seasoning. Mix well, then transfer everything into a greased casserole dish. Top with grated cheese for that cheesy goodness!
  5. Pop the casserole dish into the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden.
