Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 large carrots, grated
  • 1/2 cup honey or maple syrup Choose based on preference.
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1/2 cup chopped nuts or raisins Add for extra flavor and texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the grated carrots, honey or maple syrup, applesauce, eggs, and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture. Stir until just combined—over-mixing could make your muffins tough!
  5. If using, fold in the chopped nuts or raisins gently.
  6. Line a muffin tray with paper cups or grease it lightly. Pour the batter evenly into the muffin cups, filling each about two-thirds full.
Baking
  1. Place in the oven and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  2. Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the microwave for 15-20 seconds.
