Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the grated carrots, honey or maple syrup, applesauce, eggs, and vanilla extract.
- Gradually fold the dry ingredients into the wet mixture. Stir until just combined—over-mixing could make your muffins tough!
- If using, fold in the chopped nuts or raisins gently.
- Line a muffin tray with paper cups or grease it lightly. Pour the batter evenly into the muffin cups, filling each about two-thirds full.
Baking
- Place in the oven and bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack.
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the microwave for 15-20 seconds.
