Ingredients
  

For the Base
  • 1 cup creamy almond butter Can substitute with any nut or seed butter.
  • 1/2 cup maple syrup
  • 1/2 cup rolled oats
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
For the Coating
  • 1 cup dark chocolate chips Use dairy-free chips for a vegan option.
  • 1 tsp coconut oil Use more if needed for a smoother consistency.

Method
 

Preparation
  1. In a large bowl, combine creamy almond butter, maple syrup, rolled oats, vanilla extract, cocoa powder, and salt. Stir well until all ingredients are blended smoothly.
  2. Cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes to firm up.
  3. Once chilled, shape the mixture into small balls about one inch in diameter and place them on a lined baking sheet.
Chocolate Coating
  1. In a small saucepan over low heat, melt dark chocolate chips with coconut oil, stirring continuously until smooth.
  2. Dip each almond butter ball into the melted chocolate, covering only the top to mimic the traditional buckeye appearance.
  3. Place the dipped buckeyes back on the baking sheet and repeat until all are coated.
Setting and Serving
  1. Refrigerate for about 30 minutes or until the chocolate has set.
  2. Once solidified, enjoy your homemade Healthy Buckeyes!

Notes

Store in an airtight container in the refrigerator for up to a week. Can freeze for up to three months. Thaw at room temperature before serving.
