Preparation
- In a large bowl, combine creamy almond butter, maple syrup, rolled oats, vanilla extract, cocoa powder, and salt. Stir well until all ingredients are blended smoothly.
- Cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes to firm up.
- Once chilled, shape the mixture into small balls about one inch in diameter and place them on a lined baking sheet.
Chocolate Coating
- In a small saucepan over low heat, melt dark chocolate chips with coconut oil, stirring continuously until smooth.
- Dip each almond butter ball into the melted chocolate, covering only the top to mimic the traditional buckeye appearance.
- Place the dipped buckeyes back on the baking sheet and repeat until all are coated.
Setting and Serving
- Refrigerate for about 30 minutes or until the chocolate has set.
- Once solidified, enjoy your homemade Healthy Buckeyes!
Notes
Store in an airtight container in the refrigerator for up to a week. Can freeze for up to three months. Thaw at room temperature before serving.
