  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated parmesan cheese (optional)
  • Red pepper flakes (optional)

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In the last 3-4 minutes of cooking pasta, add the broccoli florets to the pot. This will blanch the broccoli while the pasta cooks, keeping it vibrant and crunchy.
  3. While your pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta and broccoli are done, drain them and add them to the skillet with the sautéed garlic. Toss everything together to coat in the olive oil, seasoning with salt and pepper to taste.
  5. Plate your delicious broccoli pasta, and sprinkle with grated parmesan and red pepper flakes if desired. Enjoy your colorful and flavorful dish!

Notes

You can swap out the broccoli for other veggies like asparagus or spinach for a fun twist. Don’t overcook your broccoli; you want it tender but still with a bite. Make sure to season your water well before adding pasta; it’s your chance to infuse flavor right from the start. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat gently, adding a splash of olive oil.
