Ingredients
  

For the Apple Filling
  • 4 pieces apples, peeled and chopped
  • 1 teaspoon cinnamon Divided into two parts
For the Crumble Topping
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup walnuts or pecans, chopped Can substitute with sunflower seeds or pumpkin seeds
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil, melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop the apples into bite-sized pieces and mix with half of the cinnamon in a bowl.
Crumble Topping
  1. In another bowl, combine the rolled oats, almond flour, chopped nuts, remaining cinnamon, and salt.
  2. Drizzle in the melted coconut oil and honey (or maple syrup), and stir until evenly coated.
Assembly and Baking
  1. Layer the spiced apples evenly in a baking dish and sprinkle the crumble topping generously over the apples.
  2. Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender.
Serving
  1. Allow to cool slightly before serving. Enjoy warm on its own or with yogurt or honey.

Notes

Best stored in an airtight container in the refrigerator for up to 3 days. Can be frozen if wrapped tightly. Reheat in the oven at 350°F (175°C) for about 15 minutes.
