  • 2 pieces ripe bananas The riper the bananas, the sweeter your cookies will be!
  • 1 cup rolled oats
  • 1/4 cup peanut butter or almond butter Feel free to use any nut butter on hand.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts Customize with your favorite toppings.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Add rolled oats, peanut or almond butter, vanilla extract, cinnamon, and salt to the mashed bananas. Stir until well combined.
  4. Using a tablespoon, drop spoonfuls of dough onto a parchment-lined baking sheet. Flatten each cookie slightly.
  5. Bake for 10-12 minutes, or until the cookies are lightly golden brown around the edges.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to three months. Reheat in the microwave for 10-15 seconds or in a toaster oven until warmed through.
