Ingredients
  

Main Ingredients
  • 2 pieces ripe bananas Mashed
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter) Substitutes include peanut butter or sunflower seed butter
  • 1/4 cup honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • to taste cup chocolate chips or nuts Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, take your ripe bananas and mash them with a fork until smooth.
  3. Add the rolled oats, almond butter (or your choice of nut butter), honey (or maple syrup), vanilla extract, cinnamon, and salt into the bowl with the mashed bananas. Stir everything together with a spatula until well combined.
  4. If you’re feeling adventurous, fold in any chocolate chips or chopped nuts of your choice.
  5. Use a baking spoon or an ice cream scoop, and drop the mixture onto a greased baking sheet, leaving some space in between each cookie.
  6. Place the baking sheet in the preheated oven and bake for 12 to 15 minutes or until the cookies are golden on the edges.
  7. Once baked, let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 4 days; freeze for up to 3 months.
