  • 3 pieces ripe bananas, mashed
  • 1 cup pitted dates, chopped
  • 1 cup rolled oats
  • 1/2 cup almond or peanut butter Use tahini or sunflower seed butter as alternatives.
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 pinch salt
Optional Toppings
  • to taste chopped nuts or shredded coconut For a fun twist and added texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and almond butter until smooth.
  3. Stir in the chopped dates, rolled oats, vanilla extract, cinnamon, and a pinch of salt until evenly mixed.
Baking
  1. Drop spoonfuls of the mixture onto the baking sheet, spacing them about 2 inches apart. Flatten them slightly for a uniform bake.
  2. Bake for 15-20 minutes, or until the edges are golden and slightly crisp.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container in the refrigerator for up to a week. Best enjoyed fresh or reheated in an air fryer.
