  • 2 pounds chicken thighs Boneless, skinless preferred.
  • 1 cup pineapple chunks Fresh or canned.
  • 1/2 cup soy sauce Make sure it's halal!
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 bell pepper sliced
  • 1 onion sliced
  • as needed cooked rice For serving.

Method
 

Preparation
  1. Gather all your ingredients. Chop your bell pepper and onion into thin slices and have your pineapple chunks ready.
Layering Ingredients
  1. Place the chicken thighs at the bottom of the crockpot. Add the sliced onion and bell pepper on top of the chicken.
Making the Sauce
  1. In a bowl, whisk together the soy sauce, brown sugar, ketchup, minced garlic, and ground ginger. Ensure everything is well combined.
Combining
  1. Pour the sauce mixture over the chicken and vegetables, making sure everything is evenly coated.
  2. Gently fold in the pineapple chunks for that delicious sweet twist.
Cooking
  1. Cover the crockpot and set it to cook on low for about 4-6 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
Serving
  1. Once done, serve the Hawaiian chicken over cooked rice and enjoy a tropical feast right at your table.

Notes

For substitutions, boneless, skinless chicken breasts can be used, but monitor the cooking time closely. Avoid overcrowding the crockpot for even cooking.
