  • 2 cups cooked chicken, shredded or diced Use any leftover cooked chicken.
  • 2 medium potatoes, diced Yukon Gold or sweet potatoes work well.
  • 1 medium bell pepper, diced Any color bell pepper can be used.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach Fresh or frozen can be used.
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon paprika Optional for added flavor.
  • for garnish Fresh herbs (like parsley or cilantro) Use as preferred.

  1. Start by gathering and chopping all your ingredients. Dice the potatoes, onions, and bell pepper to uniform sizes for even cooking.
Cooking
  1. In a large skillet, heat one tablespoon of olive oil over medium heat. Add the diced potatoes, seasoning them with salt and pepper. Stir occasionally for about 10 minutes or until they begin to get golden and tender.
  2. To the pan, add the onions and bell pepper. Continue to cook for another 5 minutes until they soften.
  3. Stir in the minced garlic, letting it cook for about 30 seconds. Add the cooked chicken and paprika, mixing everything together well.
  4. Fold in the spinach and cook for an additional 2-3 minutes until it wilts. Taste and adjust seasoning if necessary.
  5. Once everything is heated through and well combined, garnish with fresh herbs and serve hot.

Notes

Feel free to swap out the veggies based on what you have at home! Zucchini or kale make great additions. Don’t rush the potatoes—let them crisp up for that delightful crunch! Avoid overcrowding the pan to promote a crispy texture.
