Preparation
  1. Start by dicing the potatoes, chopping the onion, and mincing the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook for 5-7 minutes, or until it’s no longer pink.
  2. Add the chopped onions and minced garlic. Cook for an additional 3-4 minutes until the onions are translucent.
  3. Fold in the diced potatoes along with paprika, salt, and pepper. Stir well to coat.
  4. Cover the skillet and reduce the heat to medium-low. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
Serving
  1. Remove the skillet from heat. Garnish with fresh parsley or chives if desired, then serve warm.

Notes

Great for meal prep; leftovers can be stored for 3-4 days in the fridge or up to 3 months in the freezer. Thaw and reheat as needed.
