  • 2 large sweet potatoes, peeled and cubed Adds natural sweetness and creaminess.
  • 1 small onion, diced finely Adds depth of flavor.
  • 2 cloves garlic, minced Provides aromatic goodness.
  • 1 cup spinach, fresh or frozen Packed with nutrients.
  • 1 teaspoon smoked paprika For a hint of warmth and flavor.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
  • 1 tablespoon olive oil For sautéing the vegetables.

Method

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking.
  2. Cook the Sweet Potatoes: Boil or steam the cubed sweet potatoes until fork-tender, about 10-15 minutes. Drain and set aside.
  3. Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Add the Turkey: Crumble the ground turkey into the skillet, stirring frequently, until it’s cooked through and browned, about 5-7 minutes. Season with smoked paprika, salt, and pepper.
  5. Mix in the Spinach: Once the turkey is cooked, stir in the spinach, allowing it to wilt.
  6. Combine: In a large mixing bowl, mash the cooked sweet potatoes. Then, add the turkey and vegetable mixture, mixing until well combined.
  7. Transfer to a Baking Dish: Pour the mixture into a greased baking dish and spread it evenly.
  8. Bake: Bake in the preheated oven for 20-25 minutes, or until heated through and golden on top.
  9. Serve and Enjoy: Let it cool slightly, then scoop onto plates and enjoy this delightful dish!

Notes

Feel free to swap in other veggies like bell peppers or zucchini for added nutrition and taste. You can prepare the turkey and sweet potato mixture a day in advance. To spice it up, add chopped jalapeños or a pinch of cayenne pepper. For creaminess, sprinkle cheese on top before baking. Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months.
