  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 large zucchini, diced
  • 1 medium sweet potato, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced Any color bell pepper can be used.
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 teaspoon salt Adjust as needed.
  • 1 teaspoon black pepper Adjust as needed.
  • 1 teaspoon paprika Optional for added flavor.
  • to taste Fresh herbs (like parsley or basil) for garnish Garnish with your favorite fresh herbs.

Cooking Steps
  1. In a large skillet, heat the olive oil over medium heat.
  2. Once the oil is hot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onion becomes translucent.
  3. Add the ground beef to the skillet. Break it apart with a spatula and cook until it’s browned, about 5-7 minutes.
  4. Stir in the diced sweet potatoes and bell pepper. Cook for an additional 5 minutes until they start to soften.
  5. Add the diced zucchini and season with salt, pepper, and paprika, if using. Stir everything together and continue to cook for around 5-7 minutes, or until all vegetables are tender.
  6. Taste and adjust seasoning as necessary.
  7. Garnish with fresh herbs and enjoy your delicious meal straight from the skillet!

Notes

For best results, use fresh ingredients and adjust cooking times based on the size of your sweet potato cubes. Leftovers can be stored in an airtight container for 3-4 days.
