- In a large skillet, heat the olive oil over medium heat.
- Once the oil is hot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onion becomes translucent.
- Add the ground beef to the skillet. Break it apart with a spatula and cook until it’s browned, about 5-7 minutes.
- Stir in the diced sweet potatoes and bell pepper. Cook for an additional 5 minutes until they start to soften.
- Add the diced zucchini and season with salt, pepper, and paprika, if using. Stir everything together and continue to cook for around 5-7 minutes, or until all vegetables are tender.
- Taste and adjust seasoning as necessary.
- Garnish with fresh herbs and enjoy your delicious meal straight from the skillet!
Notes
