  • 1 packet taco seasoning Make sure it's Halal-friendly.
  • 1 cup diced tomatoes Can be fresh or canned.
  • 1/2 cup black beans Drained and rinsed.
  • 1/2 cup corn Can be frozen or canned.
  • 1 cup shredded cheese Choose your favorite cheese.
For Serving

Cooking the Beef
  1. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a spatula as it cooks (about 5-7 minutes).
  2. Once the beef is fully cooked, drain any excess fat and add the taco seasoning packet along with a splash of water. Stir well to combine, and let it simmer for another 2-3 minutes to allow the flavors to meld.
Preparing the Rice
  1. While the beef is cooking, prepare your rice according to package instructions if you haven’t done so already.
Combining Ingredients
  1. In a large mixing bowl, combine the cooked rice, seasoned beef, diced tomatoes, black beans, and corn. Mix until well combined and heated through.
Assembling the Bowl
  1. Serve your taco rice mixture in individual bowls. Top with shredded cheese, a dollop of sour cream, and salsa.
  2. Dig in and savor every bite! You can add additional toppings like avocado, olives, or fresh cilantro if you’d like to get creative.

Notes

Substitutions: Try ground turkey or chicken instead of beef. Use quinoa for a gluten-free option. Let the mixture sit briefly before serving for added flavor.
