  • 4 cups chopped cabbage Regular green cabbage or red cabbage for color.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional) For added flavor.
  • 2 tablespoons olive oil For sautéing.
  • 1 tablespoon soy sauce (low sodium)
  • 1 tablespoon vinegar (apple cider or white)

Preparation
  1. Start by washing and chopping the cabbage into bite-sized pieces.
  2. Dice your onion and mince the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic; sauté until they are soft and fragrant (about 2-3 minutes).
  3. Add the ground beef to the skillet. Use a spatula to break it into smaller pieces as it cooks. Brown the beef until it is fully cooked and there are no pink bits remaining, which usually takes about 6-8 minutes.
  4. Once the beef is cooked, add the chopped cabbage. Stir everything to combine and allow the cabbage to wilt for about 5 minutes.
  5. Sprinkle salt, pepper, paprika, soy sauce, and vinegar over the mixture. Stir well and cook for an additional 5 minutes until the cabbage is tender yet still crisp.

Notes
