Ingredients
  

For the kabobs
  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Wood or metal skewers (if using wood, soak in water for 30 minutes)

Preparation
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to prepare the marinade.
  2. Add the shrimp to the bowl and toss to coat. Marinate for at least 15 minutes (up to 1 hour in the refrigerator for more flavor).
  3. While the shrimp marinates, preheat your grill to medium-high heat.
  4. Thread the marinated shrimp, bell pepper chunks, and onion wedges onto the skewers, alternating the ingredients for a colorful presentation.
Cooking
  1. Place the skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp turns pink and opaque, typically 8-10 minutes total.
  2. Remove the kabobs from the grill and serve immediately, garnished with fresh herbs if desired.

Notes

Feel free to swap out the shrimp for chicken or firm tofu for a vegetarian option. Store leftovers in an airtight container for up to 2 days, or freeze for up to a month. Reheat in a skillet or oven to retain texture.
