Ingredients
  

Seafood and Marinade
  • 1 pound Assorted seafood (shrimp, scallops, firm fish like halibut or salmon)
  • 2 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • to taste Salt
  • to taste Pepper
  • 6-8 Skewers (wooden or metal) If using wooden skewers, soak them in water for 30 minutes before grilling.

Preparation
  1. Rinse the seafood under cold water and pat dry with a paper towel.
  2. In a bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper. Add the seafood and toss to coat.
  3. Let the seafood marinate for at least 15 minutes.
  4. Skewer the marinated seafood pieces onto skewers, leaving some space between each piece.
  5. Preheat your grill to medium-high heat.
Grilling
  1. Grill the skewers for about 2-3 minutes on each side, turning for even charring.
  2. The seafood is done when it is opaque and flakes easily with a fork.
Serving
  1. Serve the skewers hot, garnished with extra lemon wedges or fresh herbs if desired.

Notes

Feel free to swap in your favorite seafood or add vegetables like bell peppers or zucchini to the skewers. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat using an oven or stovetop for the best flavor.
