  • 4 pieces boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Pepper Jack cheese Can substitute with Monterey Jack or Havarti cheese.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Pat the chicken breasts dry with paper towels.
Marinating
  1. Drizzle the olive oil over the chicken breasts, then sprinkle them with garlic powder, salt, and pepper.
  2. Massage the marinade all over the chicken to ensure each piece is well-coated.
Grilling
  1. Place the chicken breasts on the grill.
  2. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Adding Salsa Verde and Cheese
  1. Generously spread salsa verde over each chicken breast once they are nearly done.
  2. Top each piece with the shredded Pepper Jack cheese.
  3. Close the grill lid and cook for another 2-3 minutes, or until the cheese melts.
Serving
  1. Remove from the grill, garnish with fresh cilantro if desired, and serve immediately.

Notes

Ensure all ingredients are fresh for the best flavor. Allow the chicken to rest for a few minutes after grilling to retain moisture. Avoid overcooking the chicken.
