Ingredients
  

For the Skewers
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1 cup ranch dressing
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 pack Wooden skewers (soaked in water for at least 30 minutes) Soaking prevents burning

Method
 

Marinating the Chicken
  1. In a large bowl, combine ranch dressing, minced garlic, black pepper, and garlic powder. Add chicken cubes, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
Preparing the Skewers
  1. Preheat grill to medium heat. Thread marinated chicken onto soaked skewers, leaving space for even cooking. Optionally, add veggies like bell peppers or zucchini.
Grilling the Skewers
  1. Place skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F.
  2. A couple of minutes before chicken is done, sprinkle grated Parmesan cheese on each skewer and close the grill lid to melt the cheese.
Serving
  1. Remove skewers from the grill and let them cool slightly. Serve with dipping sauce or alongside a salad.

Notes

Marinate chicken overnight for deeper flavor. Use a meat thermometer to check doneness. Store leftovers in an airtight container for up to three days or freeze for longer storage.
