Ingredients

Main Ingredients
  • 2 pounds baby potatoes or your favorite variety
  • 2 tablespoons olive oil can substitute with melted ghee
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 handful Fresh herbs optional, such as rosemary or thyme

Method

Preparation
  1. Preheat the grill to medium-high heat (around 400°F).
  2. If using baby potatoes, rinse them well. For larger potatoes, chop into equally sized pieces for even cooking.
  3. In a large bowl, combine the potatoes, olive oil, salt, pepper, and garlic powder. Toss until all potatoes are well coated.
  4. Optionally skewer the potatoes for easy handling, soaking wooden skewers in water for about 15 minutes beforehand.
Cooking
  1. Place the skewered potatoes on the grill or lay them directly on the grill grate.
  2. Cook for about 15-20 minutes, turning occasionally, until potatoes are cooked through and display grill marks.
  3. Once cooked, remove from the grill, sprinkle with fresh herbs if desired, and serve immediately.

Notes

For storage, grilled potatoes last in the fridge for up to 3 days in an airtight container. You can freeze them for up to a month. Reheat on the grill or in a preheated oven for a few minutes to restore their crispy texture.
