  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Preparation
  1. Wash the potatoes thoroughly. If using larger potatoes, cut them into quarters or bite-sized pieces; leave smaller ones whole.
Seasoning
  1. Combine the olive oil, salt, pepper, garlic powder, and paprika in a mixing bowl. Toss the potatoes in this mixture until well coated.
Grilling
  1. Preheat your grill to medium-high heat (about 375°F to 400°F).
  2. Place the seasoned potatoes in a grilling basket or on a sheet of aluminum foil. If using foil, create a pouch to prevent them from falling through the grill grates.
  3. Grill the potatoes for about 25-30 minutes, turning occasionally for even cooking until they are fork-tender and crispy on the outside.
Serving
  1. Once cooked, sprinkle fresh herbs on top before serving for an extra pop of flavor and color.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them in a single layer until frozen, then transfer to a freezer-safe container for up to 2 months. Reheat in the oven at 350°F until warmed through, with a quick broil at the end to revive crispiness.
