Method
Preparation
- Wash the potatoes thoroughly. If using larger potatoes, cut them into quarters or bite-sized pieces; leave smaller ones whole.
Seasoning
- Combine the olive oil, salt, pepper, garlic powder, and paprika in a mixing bowl. Toss the potatoes in this mixture until well coated.
Grilling
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Place the seasoned potatoes in a grilling basket or on a sheet of aluminum foil. If using foil, create a pouch to prevent them from falling through the grill grates.
- Grill the potatoes for about 25-30 minutes, turning occasionally for even cooking until they are fork-tender and crispy on the outside.
Serving
- Once cooked, sprinkle fresh herbs on top before serving for an extra pop of flavor and color.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them in a single layer until frozen, then transfer to a freezer-safe container for up to 2 months. Reheat in the oven at 350°F until warmed through, with a quick broil at the end to revive crispiness.
