  • 1 cup pineapple chunks (fresh or canned)
  • 1 each bell pepper (any color, cut into 1-inch pieces)
  • 1 each onion (cut into 1-inch pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce (ensure it’s Halal-certified)
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Skewers (wooden or metal)

Method
 

Preparation
  1. Start by cutting your chicken breast into 1-inch pieces.
  2. In a large bowl, combine olive oil, soy sauce, minced garlic, salt, and pepper.
  3. Add your chicken pieces to the marinade, ensuring each piece is well-coated. Let it marinate for at least 15 minutes.
  4. Thread the marinated chicken onto skewers, alternating with pineapple chunks, bell pepper, and onion.
Grilling
  1. Preheat your grill to medium-high.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
  3. Remove from the grill, let cool for a few minutes, and serve hot.

Notes

For best results, do not rush the marinating process. Store leftovers in an airtight container for up to 3 days or freeze for 2 months. Reheat in the oven or on the grill to maintain flavor.
