Grilled Mango Pineapple Chicken

Ingredients
  

For the marinade
  • 1/4 cup soy sauce Or substitute with coconut aminos.
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 juice from 1 lime
  • Salt and pepper to taste salt and pepper
For the chicken and fruits
  • 2 pieces chicken breasts Can substitute with boneless chicken thighs.
  • 1 piece ripe mango, diced For maximum flavor, use fresh.
  • 1 cup fresh pineapple, diced For maximum flavor, use fresh.
  • chopped to taste cilantro for garnish

Method
 

Preparation
  1. In a bowl, whisk together the soy sauce, honey, olive oil, lime juice, salt, and pepper until combined.
  2. Place the chicken breasts in a ziplock bag or shallow dish, and pour the marinade over them. Let them marinate in the refrigerator for at least 30 minutes (for best results, leave for 2 hours).
  3. Preheat your grill to medium-high heat.
Grilling
  1. Once heated, place the marinated chicken directly on the grill. Cook for about 6-7 minutes per side or until the internal temperature reaches 165°F.
  2. During the last few minutes of cooking, add the diced mango and pineapple to the grill. Grill them until slightly charred, about 2-3 minutes.
  3. Remove the chicken and fruits from the grill, allowing the chicken to rest for about 5 minutes. Garnish with fresh cilantro and serve with the grilled fruits.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the microwave or on the grill.
