Ingredients
  

For the Marinade
  • 0.25 cup lemon juice (freshly squeezed is best) Freshly squeezed lemon juice is recommended for the best flavor.
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
For the Skewers
  • 1.5 lbs chicken breast, cut into 1-inch chunks You can substitute with boneless thighs for juicier skewers.
  • Wooden or metal skewers If using wooden skewers, soak them in water for 30 minutes before grilling.

Preparation
  1. In a mixing bowl, combine the lemon juice, minced garlic, olive oil, salt, and pepper. Whisk until well combined.
  2. Add the chicken chunks to the bowl and coat them in the marinade. Cover and refrigerate for at least 15 minutes. If you have extra time, let it marinate for up to 2 hours for deeper flavor.
Cooking
  1. Heat your grill to medium-high heat, aiming for a temperature around 400°F (200°C).
  2. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
  3. Place the skewers on the hot grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks.
  4. Remove from the grill and let sit for a couple of minutes before serving. Enjoy the delicious skewers with your favorite salads, rice, or flatbreads!

Notes

To ensure perfect skewers every time, ensure your grill is hot before adding the skewers and avoid overcrowding them!
