Ingredients
  

For the Chicken Marinade
  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 4-6 pieces Pita bread
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1/2 medium cucumber, diced
  • 1/2 cup tzatziki sauce store-bought or homemade

Method
 

Marinate the Chicken
  1. In a bowl, combine the olive oil, red wine vinegar, oregano, minced garlic, salt, and pepper.
  2. Add the chicken breasts, ensuring they are fully coated. Let them marinate for at least 30 minutes (or longer in the fridge for deeper flavor).
Preheat the Grill
  1. Preheat your grill (or grill pan) to medium-high heat.
Grill the Chicken
  1. Remove the chicken from the marinade, shaking off any excess. Place the chicken on the grill and cook for about 6-7 minutes per side or until fully cooked (165°F internal temperature).
Prepare the Pitas
  1. While the chicken cooks, warm the pita bread briefly on the grill for about a minute on each side.
Slice the Chicken
  1. Once the chicken is all done, let it rest for a few minutes before slicing it into strips.
Assemble Your Gyros
  1. Take a piece of warm pita, layer on some shredded lettuce, fresh tomato, cucumber, and top it with the grilled chicken strips. Drizzle on the tzatziki sauce and fold the pita over.

Notes
